Easy Chicken and Beef Empanadas
When I received the Holstein Housewares Empanada Maker, I made a few easy varieties.
The masa harina (fine corn meal) is the key.
Mixing the dough.
Laying out the dough.
Chicken filling.
Beef filling.
Folded over and ready for the maker.
Done cooking.
Two for the effort of one!
Easy Chicken and Beef Empanadas
Servings: Recipe makes aprox 10 -11 batches
Ingredients:
2 cups white corn flour
1 1/2 cups warm water
1 1/2 tsp salt
2 tbsp vegetable oil
2 cups seasoned and cooked shredded chicken or beef
Directions:
Place all ingredients, except chicken, in a large bowl and knead well with hands.
Form the dough into small balls and set aside.
Follow the steps to make empanadas using the included plastic sheet.
Serve with sliced avocado.
