Don’t Miss the Meat

I’m a meat eater and love it.

Sometimes I will make a vegetarian dish that while I am making it I think about where is it “missing” the meat. Many times when I finally taste the dish, I can see where it is “missing”.

I predicted that a little chicken would be the missing ingredient here, and while you could add it, it truly would be adding. Nothing is missing here. Try it without.

Tomato and Basil Pasta

Ingredients:

4 medium tomatoes, diced (4 C.)
2 tsp. dried basil, or 2 T. fresh (chopped)
2 tsp. chopped garlic
1 tsp. salt (optional)
1/4 tsp. ground black pepper
6 oz. uncooked angel hair pasta
grated Parmesan cheese (optional)

Directions:

Mix the first five ingredients and let set at room temperature at least 1 hour. Cook angel hair pasta according to package directions and drain. Top pasta with tomato mixture. Serve immediately and top with Parmesan cheese (optional).
