There is nothing like looking in your kitchen and finding the ingredients to try something new. You may recognize the spinach from the Low Carb Beef Stroganoff and the blue cheese from the Bacon, Blue Cheese and Apple Omelette.
Four ingredients: fresh spinach, lemon juice, blue cheese crumbles and bacon bits.
Fill a large skillet with the spinach and sprinkle about 2 T of lemon juice over the leaves. The lemon juice will help enhance the flavor of the spinach. Cover and heat over medium heat. As the leaves begin to wilt, add in about 1/2 cup of blue cheese crumbles and 1/4 cup of bacon bits.
Stir until the blue cheese begins to melt and the bacon is stirred in.
Serve and smile!

Sounds so good, I love spinach! I just need to find an alternative to blue cheese (which I absolutely love, but is a no no on a very low sodium diet) I use Kroger turkey bacon bits in my salads a lot, so they would work well in this dish too

I have some about-to-go-bad spinach in the fridge that needs some attention. But I don’t have any blue cheese or bacon or lemon. The only semblances of these Ingredients I do have are parmesan and ricotta cheese, turkey deli meat, and limes. Should I give it a go with these substitutions?

I am almost positive that I have all these ingredients at home… this will be made as soon as possible! any of those ingredients is delicious, I just wouldn’t have thought to combine them in that way.

This looks VERY appetizing… this may be a wonderful dinner accompaniment in the near future as soon as our MI spinach comes in season. I can see this next to a juice grilled steak on the plate…oooOOooOh the possibilities!
