The first time I went to the Chipotle restaurant, I walked away amazed that the one ingredient that I could not get in my burrito was a chipotle pepper. You’d think that would be a no-brainer for the menu. Nope.
I later found out that they do use chipotle power in quite a few of their ingredients, such as: barbacoa, black beans, pinto beans, chicken, vinaigrette, sofritas, and steak.
Chipotle Chicken Tortilla Soup
This soup is very easy and very tasty!
I like using the lime flavored tortilla chips for this dish.
Saute the chicken.
Yum!
Chipotle Chicken Tortilla Soup
Servings: 4 servings (serving size: 1 1/4 cups soup, 1/4 cup chips, 1 tablespoon cilantro, and 1 lime wedge)
Ingredients:
1 tablespoon canola oil
1 1/2 teaspoons bottled minced garlic
3/4 pound chicken breast tenders, cut into bite-sized pieces
1 teaspoon chipotle chile powder
1 teaspoon ground cumin
1 cup water
1/4 teaspoon salt
1 (14-ounce) can fat-free, less-sodium chicken broth
1 (14.5-ounce) can stewed tomatoes, undrained
1 cup crushed baked tortilla chips
1/4 cup chopped fresh cilantro
1 lime, cut into 4 wedges
Directions:
Heat oil in a large saucepan over medium-high heat. Add minced garlic and chicken; sauté 2 minutes. Add chile powder and cumin; stir well. Add water, salt, broth, and tomatoes; bring to a boil. Cover, reduce heat, and simmer 5 minutes. Top with tortilla chips and cilantro, and serve with lime wedges.

I’ve seen Chipotle….never been there. Seems like bad marketing if you ask me. I would have been expecting a pepper myself.

Chipotle Chile is a flavoring ingredient in several of their menu items: beans, chicken, sofritas and steak; just not a condiment for add-on. I bet that if were to offer them as extras, a customer would sue for side-affects of too much scoville heat; like a coffee being too hot at McDonald’s.
