Today I am looking at the Trizor XV Model 15 Electric Knife Sharpener from Chef’s Choice by Edgecraft.
First a little base knowledge. When knives are sharpened, they are honed to an edge measured in the degree of the angle from the tip. The traditional knives from America and Europe are made with a 20 degree angle. Asian knives (and some of the latest set of higher end European knives) come with a 15 degree angle. This thinner angle makes cutting and slicing easier (less metal close to the tip), even if both knives are equally sharp.
The Trizor XV Model 15 Electric Knife Sharpener will both sharpen 15 degree knives as well as convert knives from a 20 degree angle to a 15 degree angle.
Like many of you, I don’t always keep my knives as sharp as they should be. With several sets of knives, I tend to keep the ones I use more often a little sharper, but often forget about the others. Taking a knife that my wife typically uses, I applied medium pressure to the top of the above tomato. Notice how it indented but did not cut the tomato? Yup. A dull knife. Let’s fix that.

Putting it to work. Here I started with stage one. Through repeated pulls through the unit, you alternate the left side…
Then the right. This stage takes the most metal off the blade and is designed for blades that are the dullest.
On to stage two. Both stage 1 and 2 have 100% diamond abrasives to work the blade.
The third stage brings the blade to the final sharpness.
Finishing up.
The blade is sharper than it has ever been.
With so little pressure the knife easily sinks down through the tomato.
Even the same tomato top that was resisted the cut is no match for a truly sharp knife. This one was a steak knife.
Another example (and please don’t regularly use your knives to cut paper). The paper bends before the sharpening.
And after it slices right through.
My Take: The Trizor XV Model 15 Electric Knife Sharpener makes it easy to make your knives sharp and to keep them that way. Other knife sharpeners that hone to a 15 degree edge will produce a typical V shape. This means the metal is more fragile and more easily dulled. The Trizor XV Model 15 Electric Knife Sharpener creates a beveled edge, allowing the metal to remain sturdier until it is close to the edge. I found it to be very easy to use, quick to sharpen the knives and produces a great result. It is everything I’d expect in a knife sharpener and more. Check it out.
