Lemon Chicken

This is one of my favorite recipes ever!

Lemon Chicken

Thinly sliced chicken breasts, with a little bit of spice and coated with a luscious lemon sauce.

There is hardly anything to this.

If you don’t use thin breasts, they will take a little longer to cook.

Lemon Chicken

Ingredients:

6 medium chicken breast halves
¼ C flour
¼ tsp salt
¼ tsp pepper
1 Tbl butter
1Tbl EVOO
1 Cup chicken broth
3 Tbl flour
¼ C lemon juice
1 tsp sugar
2 Tbl chopped chives

Directions:

Rinse chicken and pat dry
Combine ¼ c flour, salt and pepper in a plastic bag
Add chicken pieces a couple at a time and shake to coat
Cook chicken in butter and EVOO in large skillet over medium about 8 to 10 minutes, turning once
Remove chicken, keep warm and reserve any drippings in skillet
Whisk together broth and 3 Tbl flour until smooth; add to skillet
Cook, stirring until thick and bubbly
Cook one minute longer Add lemon juice and sugar; heat through and serve over chicken
