The Longest Running Turkey Breast

Useless trivia time….

This past September, the Broadway Show Mama Mia! ended its Broadway run, making it the 8th longest running show in Broadway history. Here are the top 10 (in reverse order) and my connection to it:

10. Rent – I’ve seen the show twice (neither time on Broadway) and it never really connected with me. Sure, there are a few good songs, but I think I found too many of the characters abrasive and so I really didn’t care what happened to them.

9. Beauty and the Beast – Also have seen this twice. The first was on Broadway where I purchased a last-minute ticket at the TKTS booth in Times Square. I was sandwiched between two rather large people (I’m rather large myself) and when I turned around there was 6 empty rows behind me. I moved and we all were better off for it. The musical is fun and upbeat. Great for kids and good for adults.

8. Mama Mia! – Um…twice on this one too. Love the music. Great idea for a story that works. Plenty of songs to sing along with and great energy.

7. Oh! Calcutta! – Before my time (at least before I went to New York). Never seen it.

6. A Chorus Line – Seen three times, including once on Broadway. A classic that only barely scratches the life of an actor/dancer in theater.

5. Les Miserables – I think I’ve seen it 6 or 7 times, including twice on Broadway. My favorite musical of all time. Yes, it is large and pretentious, but the music is beautiful and the story inspiring.

4. The Lion King – Seen it twice, but not on Broadway. A beautiful presentation that makes the actors become the characters more than you’d believe.

3. Cats – Four times. I once loved it. Now I am over it. Not sure what turned me, but just can’t listen to Memory even one more time.

2. Chicago – Seen it twice including once on Broadway. Some of the most perfect choreography. Small, precise movements that mean so much.

1. The Phantom of the Opera – Seen it four times, none on Broadway. Another spectacle that is worth seeing. I’m afraid it is heading the way that Cats has gone.

Mushroom-Stuffed Turkey Breast

Prep Time: 15 mins | Cook Time: 1 hr 30 mins | Servings: 6

Ingredients:

2 tablespoons Butter
2 Onions, chopped
2 cups Sliced mushrooms
2 Carrots, shredded
1 (10 ounce) box Frozen chopped spinach, thawed and squeezed dry
2 tablespoons Chopped fresh parsley
1 tablespoon Grated Parmesan cheese
1 tablespoon Finely chopped fresh basil, or 1/2 teaspoon dried
1 Slice reduced-calorie white bread, finely chopped
1 cup Basic chicken stock or low sodium chicken broth
1 tablespoon Grated lemon zest
1 (3 pound) skinless boneless turkey breast
Kitchen string

Directions:

In a large nonstick skillet over medium heat, melt the butter. Saute the onions 4 minutes. Add the mushrooms and carrots; saute until the vegetables are tender, 4-5 minutes. Stir in the spinach, parsley, cheese and basil; cook 2 minutes. Remove from the heat; stir in the bread, 2 tablespoons of the broth, and the lemon zest.

Preheat the oven to 325 degrees F, spray a 9X13 inch baking dish with nonstick spray.

Place the turkey between two sheets of plastic wrap; with a meat mallet or rolling pin, pound to an even thickness. Remove the top sheet of the plastic wrap from the turkey; spread the mushroom mixture over the turkey breast, leaving a 2 1/2-inch border on all sides. Starting with the short side, roll up the turkey breast jelly-roll style; tie at 2 inch intervals with kitchen string. Place the roll, seam side down, in the baking dish; pour the remaining broth over the turkey and cover loosely with foil.

Bake, basting frequently with the pan juices, until an instant-read thermometer inserted in the center of the roll reaches 180 degrees F, 1-1 1/2 hours. Transfer the turkey to cutting board, let stand 10 minutes, then remove the string and carve into 12 slices.

    Phantom may not be your favorite but I bet you’ll never forget the first time you saw it! For others, we saw it in LA and an earthquake occurred during the performance causing the chandelier to sway back and forth! The Ranting Mom
