Affogato is an Italian iced coffee dessert that is super simple to make. This fabulous dessert combines my husband and my favorite ice cream flavors: coffee ice cream (hubby’s favorite) and pistachio and chocolate (my favorites). It is the perfect summer dessert when it is so hot ~ you don’t have to turn on the oven to create this yummy treat! Somehow the name “Affogato” just doesn’t roll off my tongue, but I love ice cream rolling onto my tongue so I’ve taken poetic license and renamed my “Affogato” ~ “Icecreamie”!
Chocolate Pistachio Coffee Icecreamie
Makes 2 servings
Place 2 ice cream bowls and 2 dessert spoons in the freezer to chill.
Melt 1 tablespoon butter and 1/4 cup 62% cacao chocolate chunks in the microwave in a small bowl. Stir to combine and set aside.
Place 1 scoop of good quality vanilla ice cream in each ice cream bowl. Pour 1/2 of the melted chocolate over each scoop of ice cream. Pour 1/4 cup coffee (espresso is perfect but Colombian coffee also tastes very good in this recipe) over each serving of ice cream. Top with chopped pistachios. Garnish with a fresh strawberry.
