Many of the recipes I post out here take some time to prepare, cook or both. As many of us (myself included) do quite a bit of work night cooking, I have decided to occasionally highlight those quick recipes on Wednesdays.
A unique take on the BLT is quick and wonderful.
Fresh Mozzarella BLT with Pesto
Heirloom tomatoes and fresh mozzarella are perfect matches for the glorious bacon.
Using mozzarella slices and pre-cooked bacon could speed it up even more, but it is still plenty quick without.
I used the griddle pan to cook my bacon this time.
Mixing the spread.
On the baguette.
Don’t you just love that color?
Yum!
