The Wisdom of Children

The wisdom in the words of children never ceases to amaze me.

Many, many years ago the family was in the car driving to see some relatives. My youngest was still in diapers but my eldest, then four years old, was very proud that unlike his brother, he was not diaper bound. As many parents of young children can attest to, you pay an inordinate amount of attention to your newly potty-trained child about their bathroom needs to avoid any accidents.

We were on the Ohio Turnpike about twenty miles short of a rest stop when we heard from the back seat, “Mom, I need to go to the bathroom.” Doing a quick calculation about the time it would take to get to the rest stop, vs the pain of getting off and back on the turnpike, I asked “Can you hold it, or do you need to go?”

Providing an answer that only a son could, he replied “I can both hold it AND go!”

Oven Roasted Cauliflower with Turmeric and Ginger

Keep ahold of this recipe because it really livens up cauliflower which can often end up tasting somewhat bland.

A delicious way to liven up your side dish!

Oven Roasted Cauliflower with Turmeric and Ginger

Prep Time: 5 min | Cook Time: 20 min | Servings: 4 servings | Difficulty: Easy

Ingredients:

3 tablespoons vegetable oil
1 tablespoon black mustard seeds
1 jalapeno, finely diced
1 tablespoon grated fresh ginger
1 teaspoon turmeric
1 head cauliflower, cut into florets
Salt

Directions:

Preheat oven to 425 degrees F.

Whisk together the oil, mustard seeds, jalapeno, ginger, and turmeric in a small bowl.

Place cauliflower in a medium baking dish and toss with the flavored oil and season with salt. Roast until lightly golden brown and just tender, 20 to 25 minutes. Serve hot.

    I love and make spicy roasted cauliflower too but we can never have too many variations! This looks great…thanks! 🙂
