A couple of years ago, I heard that Texas Monthly magazine hired the country’s first-ever barbecue editor. This lucky guy makes his living driving around the state of Texas, eating barbecue, and writing a few words. Um….(hand raised)….me…ME….ME!!!!! Yeah, I could live that life.
In a recent story, Daniel Vaughn, the lucky guy, talks both about how he created the role in the first place and what his life is really like. I never really thought about the potential downsides of the life: high cholesterol and too many left-overs being two of them. Pulled Chicken Sandwiches with White Barbecue Sauce
This barbecue is more reminiscent of Alabama style with the mayonnaise and vinegar base.
Using rotisserie chicken makes this recipe a breeze.
Sauce is made.

Pulled Chicken Sandwiches with White Barbecue Sauce

INGREDIENTS
- 2 cups packaged angel hair slaw
- 6 (1.8-ounce) white-wheat hamburger buns
- 3 cups shredded rotisserie chicken
- 3/4 cup White Barbecue Sauce
- 2 hamburger dill pickle slices
- White BBQ sauce:
- 1 cup low-fat mayonnaise
- 3/4 cup cider vinegar
- 2 tablespoons fresh lemon juice
- 1 tablespoon freshly ground black pepper
- 1/4 teaspoon ground red pepper
DIRECTIONS
Mix all ingredients for the BBQ sauce.
Place 1/3 cup slaw on bottom half of each bun; top each with 1/2 cup chicken, 2 tablespoons White Barbecue Sauce, 2 pickle slices, and a bun top.
