Maggie Monday: Chicken Fajita Bubble Up Bake

Spicy and Cheesy? Love it! Here’s Maggie…

My husband loves casseroles. Pretty much any kind, anywhere, any day. Mix stuff up, add cheese and bake, and he is a happy happy man. I am always on the lookout for something new to try, and this one looked tasty, and for some reason I had several tubes of refrigerated biscuits to use up. Done.

This was actually sort of fun to make. I always keep bags of frozen cut up rotisserie chicken in the freezer, so substituted it for cutting up and sautéing chicken breasts. That cut about 15 minutes off the prep. Cool.

The husband approved. This was spicy, cheesy, and a nice change of pace. We will probably have this again, when the sons 1 and 3 are home. No leftovers!

Chicken Fajita Bubble Up Bake

What you need:


1 can (7.5 oz) refrigerated biscuits

1 package fajita seasoning mix

½ cup diced red bell pepper

½ cup diced green bell pepper

½ cup diced onion

2 Tbs vegetable oil

2 cups diced rotisserie chicken meat

½ cup water

2 cups Colby-jack shredded cheese


What you do:

Heat oven to 375°. Spray a 13×9 pan with cooking spray. Separate dough into 8 biscuits, and cut each biscuit into quarters. Place in a medium bowl and sprinkle with 1 tablespoon of the Fajita seasoning mix. Toss to coat and set aside.

Heat a skillet over medium heat. Heat 1 Tbs of vegetable oil, and add the peppers and onions. Cook about 5 until cooked to your liking. You can also char them with no oil if you wish. Remove from skillet.

Place 1 Tbs oil to skillet, and add chicken. Heat it through, then add the rest of the Fajita seasoning packet. Add water and stir until sauce thickens. Return peppers and onions to the skillet and mix.

Spoon the chicken and pepper mixture into the baking dish. Top with the coated biscuits. Bake 20 minutes or until the biscuit pieces are baked and golden brown. Sprinkle cheese over top and bake about 5 minutes, until cheese is melted.
