I love a citrus-based marinade, but had not seen one for beef that included lemon. I couldn’t wait to try this.
The marinade is very simple, and is tangy with a touch of sweet. You could easily do this under the broiler (score the meat if you are going to do this) if you don’t want to use the charcoal grill. But the grill is always better!
We enjoyed this meal on the spectacular first day of autumn in Virginia- 80 degrees, pure sun, and fresh tomatoes and sweet corn to go along. Take that, Fall! Summer Lives!!
Lemony London Broil
What you need:
1 ½ pound London Broil or flank steak
1 tsp lemon zest
½ cup lemon juice
2 Tbs brown sugar
2 Tbs soy sauce
½ tsp dried oregano
¼ tsp black pepper
What you do:
Mix all the ingredients for the marinade. Place meat in a zip plastic bag and marinate 2-24 hours. Longer is better.
Cook on a hot grill, about 11-12 minutes each side, making sure it doesn’t char. Slice diagonally across the grain.
