I have mentioned how I love corned beef hash. The other morning I was trying to determine if I wanted to make some corned beef hash or to make a breakfast burrito. I love CBH but breakfast burritos are so easy to eat and you can vary them quite a bit. Then it hit me – A Corned Beef Hash Breakfast Burrito!
It was a Eureka moment. I had a thought that no one else, ever, has had. It was like walking on territory that had never had a human walk on before. It was like observing some natural phenomenon that no one else had ever seen. I was a pioneer. Well…until I decided to confirm my unique idea with a quick google search.
Using the quoted phrase “corned beef hash breakfast burrito” revealed 62, 500 hits. Some of the pictures, in fact sadly many of them, obviously used the canned hash, so I knew I could create something that looked, and tasted, much better.
Obviously all of the food ideas are already taken….I guess I’ll be happy to just improve on them!
Corned Beef Hash Breakfast Burritos
Doesn’t that make your mouth water?
I purchased corned beef from the deli and asked them to slice it a little thick.
Fry up the pepper and onion.
Add the corned beef.
In another pan, cook the shredded potatoes.
And in a third pan, scramble the eggs. When I cook, my wife washes the pans. She hated this cleanup!
Lay out your tortilla and add all the fixings.
Roll the burrito, folding in the ends. Place the rolled burritos into a hot pan and cook them to add a little crunch to the tortilla.
An awesome combination. Glad I thought of it first! 😉
Corned Beef Hash Breakfast Burritos
Makes 4
4 Burrito sized tortillas
1 small yellow onion, diced
1 red bell pepper, diced
1 package of shredded potatoes
8 eggs
½ cup Swiss cheese
½ pound corned beef from the deli, sliced thick and then diced
- Cook the potatoes according to directions
- Scramble the 8 eggs and cook in a separate pan
- In a third pan, cook the onion and pepper over medium high heat, with a little oil if needed, until soft.
- Add corned beef to onions and cook 2-3 minutes.
- Spread a tortilla out and place potatoes, corned beef mixture, eggs and a little cheese on top. Roll the tortilla, folding in the sides as you go. Repeat for all other tortillas.
- Place burrito in pan over medium heat about 1 minute per side.

Hey Ranter, Great recipe. My local deli does not have hash 😉 so would using canned hash ruin your recipe? May I reblog this recipe?

If you cannot find corned beef (and then make your own hash from there), then sure, you can use canned. Make sure you cook it well before putting it into the burrito so the excess liquid burns off.
