Best Thing at the Party

Earlier this year we were invited to a party and when we asked what we could bring, we were told an appetizer. There are really so many options. Do I go savory? Hot or cold? Simple like veggies and dip?

I reached wayyyy back into our recipe list and pulled out a great recipe that my wife first made years ago: Bacon Cheese Spread. It is so simple, yet always the hit at the party. In fact, my college-aged nephew told me it was the best thing at the party!

This pics for this post aren’t the best but don’t let that color what you think of this. If you like bacon and cheese (and really, anyone who eats the combination loves it), then you have to make this.

Get a nice big fat loaf of Italian bread.

Mix the filling.

Cut into the loaf around the top edge. Remove the top and pull out the inside of the loaf. You will be using the shell of the loaf as your baking dish and the removed bread become utensils to scoop out the spread.

No doubt! The best thing at any party.

Bacon Cheese Spread

INGREDIENTS

  • 1 loaf unsliced Italian bread
  • 1 lb bacon, fried and crumbled
  • 1 cup mayonnaise
  • 1 small onion, diced
  • 2 tsp minced garlic
  • 8 ounces shredded Colby jack cheese
  • 8 ounces shredded Parmesan cheese

DIRECTIONS

Cut lid off of bread and hollow out center of loaf. Save torn out bread for dipping. Combine all above ingredients and place inside bread. Place lid back on bread and bake at 350° for 45 minutes. Serve hot.

There’s one word for this terrific recipe – DAMN !!! You’ve got ‘all the good stuff’ melting away in its own crusty bread bowl – it doesn’t get much better than that Mr. Ranting. ; o )

I picked up a loaf of Italian bread yesterday for something else – I think it may be destined for this, instead! Oh my gosh. There goes to diet.
