How many times have you heard that as a parent? Take the kids away from one of the many screens that occupy their attention. How many times do you think you’d hear it then? Probably quite a bit. I think in many cases it is not a question of the lack of desire to do something different and interesting, but it is often about not having a new and creative idea of what to do.
Luckily we have kids like Sam Gross around. Sam is a seventh grader who last year published the book 112 ways for kids to have fun without money. Sam’s ideas run the gambit from the athletic (play flag football with your family using bandanas) to the downright funny (watch yourself in a mirror try to eat a lemon). If you are a parent or a grandparent that wants to get your kids or grandkids away from a screen for a while, this little book will give you some great ideas.
Crazy Egg Meatloaf
This is the kind of dish that might have made it into Sam’s book if he had a recipe section – Crazy Egg Meatloaf.
This is your typical meatloaf list of ingredients with the addition of quite few more eggs.
Hard boil five eggs.
Mix the meatloaf ingredients.
Until it looks like this.
I start with a layer of the meat and then add the eggs. Then fill the meat around and on top of the eggs.
I am not a fan of ketchup so I covered only ½ the top with it.
Out of the oven and hiding the crazy surprise inside.
This seems like a weird combination but it really does work.
Crazy Egg Meatloaf

INGREDIENTS
- 2 lbs hamburger
- 2 large eggs
- 1/2 c grated parm cheese
- 1/4 c diced red onion
- 1/4 c bell pepper
- 2T parsley
- 2 cloves garlic
- 1/2 tsp oregano
- 1/2 tsp basil
- 1 tsp salt
- 1/2 tsp pepper
- 5 hard-boiled eggs, peeled
- 4 T Low Carb ketchup
DIRECTIONS
Preheat oven to 350.
Mix meat, raw eggs, cheese,vegetables and seasoning in a bowl.
Place 1/2 the meat mixture in a 9-by-5 loaf pan. Place hard-boiled eggs next to each other on top of mixture in pan.
Place rest of meat mixture on top of hard-boiled eggs and press lightly to seal and cover eggs.
Spread LC ketchup on top if desired.
Bake 1 hour 15 minutes or until temperature reads 165. drain fat off and let rest 10 minutes.
Cut into 8 equal slices.
My dad made meatloaf with a “surprise egg” in it. I thought it was pretty cool, but my siblings thought it was so gross. Very cool.
