We had a leisurely Saturday morning at the barn, and I knew several folks would be there on a chilly, blustery day so I wanted to take a treat. This was the perfect choice since the foundation is a boxed cake mix, and the additional ingredients are few, and ones most of us have on hand.
The recipe did not call for a glaze, but the photo showed a glazed cake, and I thought it would be great with a simple caramel glaze.
It was still warm when I got to the barn and everyone enjoyed it. The cake was fluffy and moist, thanks to the applesauce. I’ll make this again when I need a quick fix! It would be a perfect morning coffee cake- it has that yummy cinnamon sugar swirl that begs for a cup of coffee as a cake chaser.
By the way, daughter #2 Picky Pants ate three slices… WIN!
Easy Applesauce Cake
What you need:
- 1/4 cup sugar
- 2 teaspoons ground cinnamon
- 1/2 cup margarine, softened
- 3 eggs
- 1 (16 ounce) cans applesauce (I used chunky)
- 1 (18 1/2 ounce) boxes yellow cake mix
What you do:
- Blend sugar and cinnamon in small bowl.
- Grease Bundt pan and dust with 1 tablespoon of the sugar-cinnamon mixture, reserving remainder for cake.
- In large bowl combined margarine, eggs, applesauce, and cake mix until moistened.
- Reserve 1 1/2 cups batter.
- Pour remaining batter into pan.
- Sprinkle with remaining sugar-cinnamon mixture; then top with reserved batter.
- Bake at 350 degrees for 40 minutes or until done.
- Cool cake in pan for 15 minutes, then invert on serving plate.
Caramel Glaze:
What you need:
2 Tbs butter
2 Tbs heavy cream or half and half
½ cup packed brown sugar
½ cup powdered sugar
½ tsp vanilla extract
What you do:
1) melt butter in a saucepan over medium heat. Mix in cream and brown sugar. Bring to a hard boil for about one minute or a bit longer.
2) Remove from heat and whisk in powdered sugar. Mix until it is smooth with no lumps of sugar visible. Add a bit more cream if it is too thick. Stir in vanilla
Pour glaze over warm cake. Serve warm if possible. The glaze will harden when cool, but it is still yummy!
