It is summer and time for tomatoes! I am happy happy happy! Bring on the corn next! Here is a simple and amazingly delicious salad that makes a great meal or side. Daughter #1 loved this, as did I. The men could take it or leave it. What do they know from good? Just looking a the photo as I am writing this makes me hungry and want to go make this again. My friend saw the photo I posted of this on Facebook a couple of weeks ago and said that after looking at it three times she had to go eat a bowl of cereal to stave off the induced hunger. I may experiment with Balsamic vinegar next time. Try this when you need to toss together something quick, healthy and TASTY!!
Tomato, Avocado and Red Onion Salad
2 large ripe tomatoes
1 small red onion thinly sliced then halve the slices
Fine sea salt
¼ cup olive oil, plus more for drizzling (the good stuff)
2 Tbs red wine vinegar
2 avocados
Freshly ground black pepper
Core tomatoes and cut into wedges. Gently toss with the sliced onion, large pinch of salt, olive oil and vinegar in a large bowl. Transfer to serving dish or individual plates. Halve, pit, peel and slice the avocados, and place over the top of the salad. Sprinkle with another small pinch of salt, drizzle with olive oil and a few grinds of pepper right before serving.

looks so delicious.. i’ve always known avocado as a dessert.. shredded then adding some cream and condensed milk which is my favorite.. or as a shake (avocado, crushed ice, milk and sweetener) ..
