I love my Keurig. For those who are unfamiliar, Keurig makes coffee makers that utilize “K-cups” for the coffee. Each cup is made individually within a minute which allows both fresh coffee each cup and to allow you to have different flavors with each cup. In addition to coffee, the K-Cup system has options for various teas, hot chocolate and even “brew-over ice” drinks.
Before I had the Keurig, I rarely made a whole pot of coffee. Now, I routinely make cups as I want them.
The great folks over at Green Mountain sent me a box of their new Acai Berry Vitamin Burst Brew Over Ice K-Cups to try to work into recipes. Being a hot summer day, it was clear what I needed to make – cocktails!
Like the coffee, you put it into the brewer and it comes out hot. With the brew over ice line, you, um, well….brew it over ice.
The Acai Berry Burst is brewing. Now what to do with it? The first k-cup I made I drank it as it was intended. It was a nice refreshing taste. I liked it better than a red punch and got a bit more vitamin C to boot. The second k-cup was intended for a cocktail.
I pulled out all my potential cocktail ingredients and went to work.
Acai Berry Mojito
Acai Berry Vitamin Burst K-Cup
2 shots of white unflavored rum
Mojito mix
Mint sprigs (for garnish)
This one was pretty straight forward. I brewed the Acai Berry Vitamin Burst over ice and mixed it with two shots of rum and about 6 ounces of the mojito mix. I split it into two tall glasses and served with ice. Garnish with mint sprigs.
I liked it much better than a standard mojito where the mint can sometimes be a bit overwhelming.
Acairita
Acai Berry Vitamin Burst K-Cup
2 shots tequila
1 shot orange liqueur (Grand Mariner or similar)
1 tbsp agave nectar
Brew acai k-cup over ice. Add tequila, nectar and liqueur and stir (the nectar is a little thick). Crush ice and place in margarita glasses and pour beverage over ice.
These were very smooth. VERY smooth. I could see me drinking this all summer long!
I think I know the first thing on this year’s Christmas wish list 🙂 great recipes too!

If you really want to boost the acai, there is a clear spirit called Veev that is based on the acai berry. It’s a great mixer as well.
