When I was kid my mom used to bake pork chops in the oven with tomato sauce and a slice of lemon on each chop. They were so good- tart and sweet from the lemon and tomato sauce. It is a great memory, and flavors I’ll never forget.
I ran across this recipe on www.cdkitchen.com. I thought the flavors might be reminiscent of Mom’s chops, and it looked like an easy weeknight meal, so I decided to give it a try.
The recipe called for bottled chili sauce, and I only had Thai sweet chili sauce, so I used that instead. I didn’t think it would be worth another trip to the market.
So, it tasted nothing like Mom’s chops, but it was really yummy! This had a bit of a zip due to the crushed red pepper in the chili sauce, and I liked it a lot. This made a lot of sauce, so when I make it again, I may cut back the amounts of the wet ingredients.
This was surprisingly easy, quick and good. On the table in about 40 minutes! Good reviews from Hubs, #1 Daughter, her boyfriend, and #3 son. #2 Picky Daughter had me pop her chops in the oven with just olive oil, salt, pepper and rosemary. Just as easy, and worked for her!
Try this one when you want a quick, tangy meal. It is a keeper!
Honey Lemon Pork Chops
What you need:
6-8 pork chops. I used boneless pork loin
2 Tbs canola oil
1/3 cup Thai Sweet Chili sauce or Heinz Chili Sauce
¼ cup honey
zest of one lemon
juice of one lemon
¼ tsp salt
¼ tsp pepper
½ cup sour cream
1 Tbs flour
What you do:
Trim fat from chops and lightly score. Heat oil in a large skillet. Brown meat on both sides. Drain fat. In a bowl combine chili sauce, honey, lemon zest and juice, salt and pepper.
Pour the sauce mixture in the pan, over the chops and stir a little to distribute. Cover and simmer over low heat for about 15-20 minutes, just until meat is cooked through. Remove chops from pan and keep warm. Whisk flour into sour cream- making sure it is thoroughly combined. Stir the sour cream mixture into the pan with the chili sauce, and cook until smooth and thick. Pour over the chops, and serve.
