The other night I had to perform a menu switcheroo.
I had this recipe queued up for the evening and after getting everything out and taking my ingredient picture, I read that the chops should marinate for 3-6 hours. Ugh. The only time I can marinate something for 3-6 hours is on the weekend. Else, I’m at work. I figured that if it works for 6 hours, it will work for 24, so I decided to go ahead and marinate them for tomorrow’s dinner. These became my mistakenly marinated pork chops.
While I am not a ketchup fan, I loved the taste of these. A nice punch of flavor without the heat.
I actually had everything on hand except for the chops.
These were thick chops, so the longer marinating time was probably a good thing.

Mistakenly Zesty Pork Chops
Prep Time: 15 min | Cook Time: 1 hr | Makes: 4
Ingredients:
- 1 cup soy sauce
- 3/4 cup water
- 1/2 cup brown sugar
- 1 tablespoon honey
- 1 dash lemon juice
- 4 pork chops
- 1 cup ketchup
- 1/2 cup cocktail sauce
- 1/4 cup brown sugar
- 2 tablespoons water
- 1 1/2 teaspoons ground dry mustard
Directions:
1. In a saucepan over medium heat, mix the soy sauce, water, brown sugar, honey, and lemon juice. Bring to a boil, remove from heat, and cool.
2. Place the pork chops in a large, resealable plastic bag. Pour the soy sauce mixture into the bag, seal, and marinate in the refrigerator for 3 to 6 hours.
3. Preheat oven to 350 degrees F (175 degrees C).
4. Drain the pork chops, and discard remaining marinade. Arrange the pork chops in a baking dish, cover, and bake 30 minutes in the preheated oven.
5. In a bowl, blend the ketchup, cocktail sauce, brown sugar, water, and mustard. Pour over the pork chops, and continue baking 30 minutes, to an internal temperature of 145 degrees F (63 degrees C).

When I go to the market, I start marinades in a zip bag that same day, then put them in the meat drawer with a sharpie date of when I want to cook them. I am also known to marinade, let sit till the weekend, then throw everything on the grill, bag again and freeze when I get good deals on meat. You can have a good dinner at any time! 😉
