Gourmet Club: Things That Start With S: Super S Salad

As mentioned in yesterday’s post, we recently had a Gourmet Club where the theme was “Starts with S”. My assignment was soup or salad. I could have picked a single ingredient to make the S requirement satisfied (squash, spinach) but decided to go a step further.

I started by listing all of the ingredients that I could think of that started with the letter S. The list went on for several columns on a page. Looking over them, I decided I’d do a Super S Salad.

Forgive the lighting on this picture. It was a Super Salad.

Everything here starts with S.

S Salad

(ingredients are per person)

2 cups baby Spinach – washed and trimmed

1 large Strawberry – sliced

2 large (16-20) Shrimp – cooked

1 slice Serrano ham

Snow pea pods – cut in half

1/2 Shallot – thinly sliced

1/8 cup Sesame Sticks

2 tsp Sunflower Seeds

1 tbsp Swiss cheese – shredded

Salad Dressing:

  • 1/2 cup Sherry wine vinegar
  • 1/4 cup Sunflower or Safflower oil
  • 1/4 cup Soy Sauce
  • 1/8 cup Sesame oil
  • 1 package of vinegarette mix

Mix dressing and refrigerate.

Slice serrano ham into thin strips and fry up until almost crispy.

Build salad starting with spinach and adding all other ingredients. Top with dressing.
