This recipe involves a cute memory of Bren and I not having enough ribs to share between us. We love our food, haha.
I love, love, love recipes that are very simple and tasty, and so this is a rare dish which I actually enjoy putting in that extra bit of time and effort into it, simply because I think the end result is worth it, and I hope you do too! I definitely learnt my lesson and always prepare more ribs for our dinners now, after that first attempt of these ribs and Bren commenting, “Only 2 ribs for me??” ;P
Sticky BBQ Ribs
6 pork prime ribs
300 ml white wine vinegar
2 tbsp soft brown sugar
1 tbsp salt
1 tbsp hot paprika
2 tsp crushed black pepper
2 tsp onion powder
1 tsp garlic powder
1/4 tsp cayenne pepper
150 ml BBQ sauce
1. Wash ribs under cold running water and pat dry with paper towels.
2. Put ribs into large dish, add vinegar and leave to soak for at least 4 hours. I like to leave them overnight.
3. Discard the vinegar, rinse ribs well and pat dry.
4. Put sugar, salt, paprika, pepper, onion powder, garlic powder, and cayenne pepper into a bowl and mix well.
5. Rub mixture all over ribs and leave to marinate in refrigerator for a least 2 hours.
6. Preheat grill pan (I used my HappyCall Pan for this) and grill covered for 10-15 mins on each side on medium heat. Brush with marinade mixture and grill for another 5 mins until ribs are tender, sticky & yummy!
