Having made some burrito sized tortillas (as mentioned in a previous post), I needed to find a good way to use them. Remembering that I had a container of beef chimichanga meat in the freezer, I knew I had a match. The meat was made for the Beef Chimichanga post.
Even though the meat had some black beans in it, I decided I’d add a bit more. In addition, a bit of enchilada sauce and Mexican blended shredded cheese was added.

I had extra ingredients, so I also made a tortilla pie by layering the ingredients in a 9×9″ dish.

This meat is so good, and with the homemade tortillas, it is a real winner.
