My family lived in Southern California when I went off to study at The Ohio State University. After telling new acquaintances I was from Redondo Beach, the inevitable question was “why are you here???” I would answer that I had been brainwashed as a kid and that generally sufficed.
Many of my college friends talked about coming out to visit me during the summer so they could spend time at the beach and see the sights of Los Angeles. During one such visit, I took my friend Ron across the border to Tijuana, Mexico. We walked through the shops, bought tourist trinkets and ended up in a bar to quench our thirst. A big sign outside mentioned that the margaritas were 2 for 1. We went inside, sat at a table and each ordered two margaritas.
The waiter showed up seconds later with 8 margaritas. He gave us each the two we ordered and then gave us each the two free ones. A nice little scam, but being college students, we treated it like a challenge. As these margaritas were on the rocks, and heeding the recommendation to drink the margaritas before the ice melted, we downed them pretty quickly. I don’t remember much about the walk back across the border!
A nice summer drink is the pineapple margarita.
You can use fresh lime and pineapple juice, but I had the other stuff on hand.
Delicious, sweet and refreshing. I made these in a blender.
Pineapple Margarita
Cook Time: 3 min | Servings: 8 | Difficulty: Easy
Ingredients:
- 1 1/2 cups lime juice, about 15 limes
- 2 cups white tequila
- 2 cups Triple Sec
- 3 cups fresh pineapple juice
- Fresh pineapple slices, for garnish
Directions:
Combine the lime juice, tequila, Triple Sec, and pineapple juice. Fill a cocktail shaker 1/2-way with ice and fill 2/3 full with the margarita mixture. Shake for 30 seconds and pour into glasses. Decorate with fresh pineapple slices and serve ice cold.
Love Margarita especially from the border!

i absolutely love a good margarita–my favorite drink! my boyfriend is from san diego (i’m actually in san diego right now), and i once had an absolutely amazing cadillac margarita at a mexican restaurant nearby. So. Delicious.

I went to Ohio State to graduate school. Even though I have actually lived in Mexico–long ago in Veracruz, I have never been only to one border town–Nogales. Most of my many Mexican friends did not come from border towns so…I have never tasted a pineapple margarita, actually never heard of it before. Will have to try this.

I’m a classic margarita lover myself, but pineapple is definitely intriguing. I’ll see how my friends in the South Bay feel about them tomorrow night 😉

I had the second worst margarita ever last night at a chain restaurant. This recipe may make up for it. In fact with two cups of tequila in it I don’t think that anything will be bothering me after drinking this.
