Risky Business Pecan Pie

One of the biggest surprises to me as an adult is how infrequent I am in my house alone. Other than occasionally working from home, I am so rarely in my house alone. My boys have every workday afternoon alone and nights when we have a “date night”. My wife has a weeknight every couple of weeks when my boys and I are out of the house. She even gets occasional nights when the boys are camping and I am travelling. Me? Hardly ever.

I had one of those rare evenings in mid November. With the whole evening ahead of me, what should I do? I first thought about going to a local casino and playing some cards, but that wouldn’t be at home. My wife thought I’d go crazy and dance around in my underwear (a la Tom Cruise in Risky Business). In fact she attempted to close the curtains to our big bay window so the neighborhood couldn’t look in. I told her that if I decided to do that, it was the neighbor’s problem if they happened to spy me!

It was a mid-November Saturday night, so I pretty much wasted the night watching college football and making a chocolate pecan pie.

I really like pecan pie and had it on my foodie bucket list to make. In looking for recipes, I found a chocolate variation and decided to go that route. The picture above was from the first slice where it had cooled, but not completely set. Oh My God it was rich and chocolately!

By using a frozen pie shell, it was so easy. Buy a deep dish pie shell. You’ll need the room.

Spreading the melted chocolate in the bottom. I used a whole bag of chocolate chips. It was probably a bit too much because once it set in the fridge, it was a half-inch thick bar at the bottom. Not easy to cut but still tasted great. Next time, I think I’d put 1/2 a bag in the bottom and 1/2 in the pie mix. The original recipe calls for it all to be in the mix but many of the comments put it at the bottom.

Not having made a pecan pie before, I was a little concerned about the “yellow custard” shade before baking.

I shouldn’t have been worried. I think that this may be one of the most delicious pics I’ve put on this blog.

Chocolate Pecan Pie

Prep Time: 15 m | Cook Time: 1 h 5 m | Makes: 1 – 9 inch pie

Ingredients:

  • 1 (9 inch) unbaked pie crust
  • 3 eggs
  • 2/3 cup white sugar
  • 1/2 teaspoon salt
  • 1/3 cup margarine, melted
  • 1 cup light corn syrup
  • 1 cup pecan halves
  • 1 1/2 cups semisweet chocolate chips

Directions:

Preheat oven to 375 degrees F (190 degrees C).

Melt chocolate with additional 2T butter and spread over bottom of pie crust.

Beat eggs, sugar, salt, margarine, and syrup with hand beater. Stir in pecans. Pour mixture into pie shell.

Bake until set, 40 to 50 minutes. Cool.

COOK 50 mins

READY IN 1 hr 5 mins

    Talk about quality “me” time 🙂 I love chocolate-pecan pie so please lie to me and tell me that the 736 calories refers to the entire pie.
