Most of the recipes that I feature here come from someplace else. At first they were from the cookbooks I owned. Now, most of the recipes are from sites on the Internet. Every once in a while I decide to just throw a few things together on my own.
Bourbon-Orange Pork Chops
These were nothing short of spectacular.
I had a few pork chops in the fridge I needed to use up and was tired of seeing a little jar of orange preserves taking up space in the fridge. I had needed a couple of tablespoons for a recipe a while ago and as we are not a “toast” family, there it had set. I also had a nearly empty bottle of cheap bourbon.
Season the chops with salt and pepper and put your skillet over a medium high heat. Add 1-2 T of oil. Once the oil is hot, add the chops.
Cook 4-5 minutes per side until the chops are done and then add 1/4 c of orange preserves. I used the rest of my jar and had some apricot preserves that I took a tablespoon or two out of.
Add 3-4 tablespoons of bourbon to deglaze the pan. Cook until the bourbon reduces and the resulting liquid is more of a glaze for the chops. Serve.

I am going to try this – sounds delicious. Have you tried brining the pork first? makes it really melt in the mouth.
