Maggie Monday: Breakfast Burrito Casserole

When I saw this recipe I knew my husband would love it. It called for just 6 ingredients, and can be assembled the night before baking.

Even with browning the sausage, this only took about 20 minutes to prep the night before baking. The taco size tortillas are the right size to fit into a standard 9×13 dish. I was a little skeptical in pouring the eggs and cream over the tortillas and leaving it overnight, but decided to trust the process.

I did need to bake this about 10-15 minutes longer for the eggs to set, but they did, and it was really good! This was a nice change of pace for a breakfast casserole. The next time I make it I will probably add diced onions, and perhaps some hash brown potatoes to the meat mixture.

My husband did indeed like this- I think he ended up having it for breakfast and lunch for a couple of days.

Breakfast Burrito Casserole

What you need:
1 lb. sausage
1 can Rotel tomatoes, drained
2 1/2 cups shredded cheese, divided
6 eggs
2 cups half and half
10 flour tortilla

What you do:
Assemble the casserole the night before and bake it in the morning.

Spray a 9×13-inch pan with cooking spray and set aside. Mix together sausage, Rotel tomatoes, and 2 cups of cheddar cheese. Divide meat and cheese mixture between tortillas. Roll up each tortilla and place seam side down in the baking dish.

Whisk together half-and-half and eggs. Pour over tortillas. Cover and let sit overnight. (Note: I made this only a few hours before baking and it was still great)

When ready to bake, preheat oven to 350 degrees. Bake covered for 30-40 minutes. Remove foil and sprinkle remaining 1/2 cup of cheese over burritos. Bake for 5-10 minutes, until cheese is melted. Top with salsa. Enjoy!
