Weekend lunches in the colder months at the Ranting House is often a nice warm soup or maybe a hot sandwich. During the warmer weather, salads are the first choice and this one is a very tasty option.
Spinach-Apple Salad
The tart, crisp apples, sweet cranberries, tangy blue cheese, crunchy walnuts and luscious spinach make this a great salad.
The honey and mustard are key to the dressing.
Dressing is made.

INGREDIENTS
- 3 tablespoons olive oil
- 1 tablespoon cider vinegar
- 1 teaspoon Dijon mustard
- 1/2 teaspoon honey
- salt
- pepper
- 10-ounce bag baby spinach
- 1 sliced green apple
- 1/2 cup chopped toasted walnuts
- 1/2 cup dried cranberries
- 1/2 cup crumbled blue cheese
DIRECTIONS
Whisk 3 tablespoons olive oil, 1 tablespoon cider vinegar, 1 teaspoon Dijon mustard, 1/2 teaspoon honey, and salt and pepper. Toss with a 10-ounce bag baby spinach, 1 sliced apple and 1/2 cup each chopped toasted walnuts, dried cranberries and crumbled blue cheese.

Salads with fruits rank high on my list of favorites. Even better, my kids always ate them, and sometimes managed to get some spinach or lettuce in doing so!
