Sunday Rewind: Carb Loading for Lent

As The Rantings of an Amateur Chef has been going since February of 2012, there are quite a few readers that have joined along the way. In an effort to bring back some great recipes that they may have missed, I will dedicate Sundays to re-posting a favorite that is at least two years old. I hope you enjoy! – The Ranting Chef

I am not much of a baker. I say it. I belive it. But I find myself baking more regularly than I thought. This baking came up again tonight.

My wife has decided to go low carb until Easter. She let me know this on Saturday as I was just starting to make our menu for the week. After I contemplated weeks without pasta, bread or even, yes I must say it, tortillas, I complied with my menu planning late in the week. We’ve both done the low carb thing in the past. In fact, I’ve lost large amounts of weight (80, 50) on it and think it is a good way to lose. My problem is not making it more of a lifestyle and it all comes back.

So as this was to start on Wednesday, February 22, I of course, planned a carb loaded dinner. My wife, who is the primary weekday cook, made the dinner. I was home in time to try a new recipe for biscuits which were an attempted knock off of Red Lobster’s. They were good. Next time (not before the end of Lent), I’ll add more cheddar and possibly some Old Bay seasoning.

Cheddar Bay Biscuits

Prep Time: 10 mins | Cook Time: 8 mins | Servings: 15 | Difficulty: really easy

Ingredients:

  • 2 cups Bisquick
  • 2⁄3; cup milk
  • ½ cup cheddar cheese, shredded (next time I will double this)
  • (next time I may add 1 teaspoon of Old Bay seasoning to really bring the “Bay” out)
  • ½ cup margarine, melted
  • ¼ teaspoon garlic powder

Directions:

1. Heat oven to 450 degrees.

2. Mix bisquick, milk and cheese until a soft dough forms.

3. Drop by spoonfuls onto an ungreased cookie sheet.

4. Bake 6-8 minutes or until golden brown.

5. Mix butter or margarine and garlic powder.

6. Brush mixture over warm biscuits before removing from cookie sheet.

    Well, I certainly count myself a fan! I don’t understand how you manage to post so often – there’s a long list in my head of recipes I can’t wait to try! I’m glad you’re pulling out some of your favorites to highlight!

    I add honey to the butter that you melt to brush on the biscuits. I think it brings out a sweetness that I sense in the Red Lobster recipe.

    I worked (briefly) at Red Lobster in my teens, and I swear I gained 10 pounds just from these biscuits! I haven’t had one in years, but I might have to try this. Thanks!
