Maggie Monday: Cinnamon Roll Casserole

Cinnamon rolls are a Christmas morning tradition for our family. I decided to search for cinnamon roll casserole recipe I could make the night before. I came upon this one from Just a Pinch. It was great! You can assemble the night before, or just make it and bake it straight away.

I loved that this used the prepared tubes of cinnamon rolls- I used Pillsbury, but you can probably use any brand. I used kitchen shears to cut the rolls into little bits. I also pumped up the cinnamon by an extra teaspoon because that’s  how we roll here.

I placed the nuts on half of the casserole due to Miss Picky Pants daughter #2 not liking nuts. It smelled great while it was baking. When I make it again, I might make a little extra icing. It could have used a little more sweetness. P.S. the nut side was best!

The texture was good- I was afraid it would be too eggy, but it wasn’t- very yummy and passed  muster for the family Christmas breakfast. This would be great for weekend company brunch. Super easy and pretty to boot!

Cinnamon Roll Casserole

What you need:

2 Tubes prepared cinnamon rolls (tubes have 8 rolls each)

2 Tbs butter

4 eggs

½  cup heavy cream

2 tsp cinnamon

¼ cup maple syrup

1 cup chopped pecans (optional)

What you do:

Heat oven to 375. Pour melted butter into ungreased 13X9 inch glass baking dish. Separate both cans of dough into 16 rolls, set icing aside. cut each roll into 8 pieces, place each roll into buttered dish.

In medium bowl, beat eggs. Beat in cream, cinnamon and vanilla until well blended; gently pour over roll pieces. Sprinkle with pecans; drizzle with 1/4 cup syrup.

Bake 20-28 mins or until golden brown. Cool 15 min. Heat icing in microwave 10-15 seconds or until thin enough to drizzle. Drizzle icing over top of casserole and enjoy!

    That’s one nice mom. In my family, if you were picky about food, someone was bound to eat it up before you changed your mind. (That someone was usually my dad, actually.) And if you turned your nose up at dessert, or anything sweet? Well, we all figured you were sick and would do better without any!
