Many people are known for a signature dish. They make something that is so fabulous that they are asked…..no begged….to make it all the time. Such is the case with my Mother-In-Law’s (MIL) potato salad.
My in-laws have a nice big yard and are the only ones in the family with a pool, so their place is often the gathering spot during the summer. Whatever the reason for the get together, my MIL is always asked to make her potato salad. She smiles and never fails to produce a nice big bowl of it. Others have tried to make it, but hers is truly the best.
This stuff is the crack of the picnic table, you can’t get enough.
I had petite red potatoes and Miracle Whip on hand, but went out to get the medium potatoes and Helmann’s Mayo to be true to the recipe.

Oh man….soooooooo goood. I asked my wife if it was close to what her mother makes, and she said I nailed it!
Grandma O’s Potato Salad
Ingredients:
- 6 medium red skinned
- 3 hard boiled eggs, cut up
- 1 cup celery, diced
- 1/2 cup chopped onion
- 1 tsp salt
- 1/4 tsp pepper
- 1 cup Hellmann’s real mayonnaise
- 2 tsp mustard
Directions:
Skin potatoes, boil them for 45 minutes and cut them up. Add remaining ingredients. Mix. Chill. Serve.

I appreciate the dedication to getting real mayo – miracle whip is NEVER a good substitute! (but then I am a Southerner and we are a bit hardcore about Mayo) Always love a good potato salad – look forward to trying the recipe!

Just a bit more info from the daughter…you always have to make 10 lbs of potatoes…it is just so good. We fight over the leftovers and it tastes even better the next day

Beautiful – it reminded me of my childhood, my mom always made her “Pennsylvania Dutch” potato salad – all the same ingredients as yours, but also, very finely chopped sweet gerkin pickles and celery seeds.

BTW, love a great homemade potato salad. It’s the hard boiled eggs, mayo and mustard that do it for me! @continuousdrawing The gherkins would be a nice touch. My mother puts some vinegar in her recipe, I believe.

Yum! This is much like my husband’s amazing potato salad… crack, indeed. If you have access to Japanese mayonnaise, preferably Kewpie Brand, that makes it even better. Don’t know what makes it different form the North American varieties, but it makes everything it touches turn to Even Better. 🙂
