Easy Spicy Roasted Potatoes

My typical seasoning for roasting vegetables is pretty simple, olive oil, salt, pepper and possibly a little rosemary. As I am constantly looking for some new sides, I am starting to investigate some different seasonings. This one adds a bit of cayenne.

While they were very good, the cayenne was pretty subdued. Next time I would increase the quantity that I used.

One of those potatoes was a little more than a medium size.

I decided to dice the potatoes and other veggies to a 1/2-3/4″ dice.

Easy Spicy Roasted Potatoes

Prep Time: 15 m | Cook Time: 55 m | Makes: 4 servings

Ingredients:

  • 5 medium red potatoes, diced with peel
  • 1 medium onion, chopped
  • 1 tablespoon garlic powder
  • 1 tablespoon kosher salt
  • 2 teaspoons chili powder
  • 1/4 cup extra virgin olive oil
  • 1 cup shredded Cheddar cheese (optional)
  • Red, yellow or orange pepper (optional)

Directions:

Preheat the oven to 450 degrees F (220 degrees C).

Arrange the potatoes and onions in a greased 9×13 inch baking dish so that they are evenly distributed. Season with garlic powder, salt and chili powder. Drizzle with olive oil. Stir to coat potatoes and onions with oil and spices.

Bake for 35 to 40 minutes in the preheated oven, until potatoes are fork tender and slightly crispy. Stir every 10 minutes. When done, sprinkle with cheese. Wait about 5 minutes for the cheese to melt before serving.

    I was so excited to see this recipe. I have roasted root veg on my menu for this week, and I ALWAYS do the olive oil, salt & pepper, and rosemary. I love cayenne and never thought about using it with the veg UNTIL NOW! Thanks. However, I noticed that you used chili powder in the recipe and not cayenne. Was is good? As good as cayenne? Let me know. My menu for the week depends on it. 😉

    Really simple, almost no prep, is just cut the potatoes, unpeeled, into wedges. Dry them, coat in olive oil, put on a baking tray, grind some salt and pepper over then a good sprinkle of cayenne. Pup in a hot oven till tender inside and golden brown outside. Delicious!

    Oven roasted potatoes are one of my favorite sides. I add minced garlic and some Tony’s to mine. Can’t wait to try this recipe!
