Quick Grilled Zucchini and Squash

It is amazing how preconceived notions of foods drive if we like them or not. Vegetables are one of those items that many kids automatically dislike even before they taste them.

One summer I was visiting relatives in Michigan and my brother, two cousins and myself sat down for a snack. My aunt brought to the table a loaf of banana bread that had been cooling on a rack. My young cousin, about six years old at the time, had heard that her mother was going to make zucchini bread and professed loudly that she HATED zucchini bread. It was awful and she WOULD NOT EAT IT. My aunt, calmly replied that she had changed her mind and made banana bread instead.

After scarfing down a piece my cousin asked for more. She was told that she couldn’t have more until later and so she went outside to play. After she left my aunt let the rest of us know that it really was zucchini bread. Change the perception, change the taste.

I love grilling slices of zucchini and yellow squash. It is quick and delicious.

The simple recipe includes slicing zucchini and squash, season with salt and pepper and sprinkle with lemon juice.

I use a grill wok as they so easily slide between the grates. About ten minutes over a medium low to medium heat on the grill, stirring a couple of times does the trick.

    I absolutely love vegetables on the grill! I often don’t season them at all because I am so fond of the natural tastes and don’t want to hide any of them.

    Yum! We had so much zucchini in the garden each year, I used to get sick of it. Now, it’s a treat! I wonder how the young cousin would feel about zucchini blossoms? I was around six when my made these yummy battered thingies. Of course, I don’t think I learned what they actually were until much older.

    This might be unbelievable but yellow squash is nearly impossible to find in Provence. I see it at the market once or twice a summer and that’s it. So sad, because I love it. Maybe I could buy seeds and grow it myself…

    I often grill vegies too. sometimes in the same metal basket and other times straight on the grill, i like the stripes!

    I’m with budgetcooking above. I love to sautee the two together in butter with onion, salt and pepper. It’s an amazing flavor that I always devour. But, as spring and summer approach, it is time to grill. And grilled veggies are fantastic. I’ll be grilling some corn on the cob soon, along with zuc and squash, peppers, and all sorts of other things. What a summer of posts I envision!

    Our son said he did not like mushrooms…. I fried up some mushrooms and told him they were fungi, he ate them no problem. A while later we told him they were mushrooms.

    Here in the UK we call zucchini them courgettes… Im loving your veg posts, as you know I am a Vegan 😉

    A great blog and a great way to use zucchini and yellow squash too. We grill squash slices frequently also. I use an Armatelle dish – very versatile dishes as they can be used in oven, on grill, in fridge or on the table! I use a little grape seed oil or extra virgin olive oil when I do my squash in my Armatelle pan on the grill.

    First, thanks for the follow! Second, your blog is wonderful! I LOVE vegetables. Zucchini is one of my favorites. Squash is so so, but I will try your recipe. In the summer, I like to chop of fresh Zucchini and sweet onions. I add a drop of olive oil and season with freshly ground pepper and a all season salt. I cook them on the grill wrapped in heavy foil. Mmmm… tasty. I can’t wait to try them on the wok on my grill. Sounds delicioius.

    I’ve learned from gardening that if zucchini or squash are allowed to overgrow, it’s not too late to grill them. Sliced lengthwise and seasoned they are still delicious off the grill and the seeds soften and are not noticeable.

    I love grilled zucchini! When we grill ours, we brush it with olive oil and sprinkle with adobo seasoning, salt and pepper. delicious!
