Welcome back to Maggie Monday. As I mentioned before, Maggie is a former boss of mine when I was a resident advisor at The Ohio State University. Maggie started a practice where different staff members had the responsibility for running a staff meeting. With the staff we had, we each tried to out do the other with creativity. I think my favorite was pajama staff meeting. Back then I felt that Maggie was looking to increase our leadership abilities by passing on the responsibilities. Now, I realize she got away without having to plan them herself. Very sharp Maggie. Very sharp!
Peanut Butter. Chocolate. I don’t really need to say much more about this post. Easy-peasy as traditional brownies but a nice change. I also like that you can taste the salt. Chocolate+salt= yum.
I like to vary “brownie” recipes at our house. “Brownie” (sorta like “Coke” for soft drink or “Kleenex” for tissue) has come to mean pretty much any dessert I bake in a pan and cut into squares that can be eaten without a fork. Look for my daughter’s favorite “Orange Brownies” soon.
If you like peanut butter and chocolate, make these brownies.
Peanut Butter Chocolate Chip Brownies
What you need:
½ cup smooth peanut butter
1/3 cup softened butter
2/3 cup sugar
½ cup packed brown sugar
1 egg
1 tsp vanilla extract
1 cup flour
1 t baking powder
½ t kosher salt
1 ¾ cups chocolate chips- reserve ¼ cup
What to do:
Preheat oven to 350 degrees. Grease a 9×9 or 8×8 baking pan. In a bowl, cream together peanut butter and butter until smooth. Add in both sugars, egg and vanilla. In a separate bowl sift together flour, baking powder and salt. Stir into peanut butter mixture. Fold in 1 ½ cups of chocolate chips. Spread into prepared pan and bake for about 30 minutes, until toothpick comes out clean.
Remove from oven and sprinkle with remaining chocolate chips. Allow to completely cool before cutting.

Sounds great, not sure about the salt though! My kids love peanut butter and the wife has it with Marmite in sandwiches so might give this one a go!

I was just thinking I wanted to make something snacky. Perfect timing.
The first line of tags at the bottom of this post reads: bacon, baking, beef, beer, breakfast. You wouldn’t know of a recipe like that would you?

Hmmm.. Wondering if you could make a Steak and Eggs guiness pie. Braise the beef in bacon fat and guinness and chop it, serve it with eggs inside a baked pot pie. Might just work!

My son has an egg allergy. Can I omit this ingredient in this recipe? What does the egg function here? Thanks.

This is something you may want to talk to your doctor about, but my nephew has an egg allergy. He can eat baked goods with eggs in them, because, apparently, baking changes the chemical property that causes the allergic reaction. His allergy is BAD, too. They can’t have eggs in the house, at all, but I can bake him cookies.
I mean, I wouldn’t recommend just trying it, because it could be a different type of allergy… but definitely look into it!

In baking, eggs bind the ingredients together, add some moisture, and can provide a lighter, less dense product. In a brownie, this is less important than in a cake. You can probably substitute yogurt or applesauce with an equally yummy outcome. Just might be a bit more dense. Give it a try and let us know!

Those look absolutely delicious … Must try … @Winn – when my son was allergic to eggs I used to subisti tute 1 egg With a misture of: 1 tsp baking poudre+ 1 tap liquid (I used milk) And 1 tsp of vinegar – things we re just a bit more crunchy … But better than nothing!

Thank you all for the help regarding the egg allergy. My son cannot have eggs cooked, uncooked or even a little bit as an ingredient. I think I might try this recipe one time without eggs, and another time substituing with yogurt or applesauce. Thanks for the help!

You could also look out for an egg replacer, they are becoming a bit easier to find as vegetarian and vegan diets become more popular. The one I have is called Orgran No Egg [it’s an Australian brand though but I’m sure you could find a similar product] and contains Potato starch, Tapioca flour, Calcium carbonate, Citric acid, vegetable gum (stabiliser): Methylcellulose and can be used in cakes, biscuits, custard fllings, mayonnaise and in batters [it’s also gluten free]. It’s just an alternative to making your own everytime you need it.

Greetings Ranting Chef! Thank you for visiting my blog and liking my empty plates. I have a feeling it will turn into a large series of images eventually. The recipes you share make me hungry and I hope to try some of them. I follow a fairly “paleo” diet, which leaves out starches and sugar – as a replacement I use coconut palm sugar and/or raw honey – and almond meal flour for crackers, savory or sweet… Lots of protein, vegetables, fruit and nuts… I’ll continue to browse through your food suggestions!

Chef, I got a question. When you said pre-heat oven. For how long is it? some time the oven seemed become too hot :0

If you have an oven where you can set the temperature: My previous oven never told me when it was up to temperature, so I would often give it five minutes. The oven I purchased five years ago will let me know when it is up to the temperature I set. It often takes 10-15 minutes. The hotter you want it, the longer it needs to pre-heat. If you trust the temperature you set it is as hot as it will get, then let it get up to that temperature before you use it.
If you are baking in an open hearth oven or one where you cannot set the temperature: This is so dependent on how fast the fuel heats it up.

You’ve inspired me! I’m going to have to come up with a gluten-free non-peanut version of this…I think I’m craving sugar, and these would totally satisfy! And Kudos to maggie for changing up staff meetings- more people should do that- the corporate world would be a better place!

These little dangers (I’m talking about calories here !) seem incredibly delicious. I have eaten 3 chocolate brownies for my lunch but I’m sure these ones taste much better !!! Thank you for liking my “Coca-Cola®” post !!!
