Some recipes lend themselves to playing around. I’ve made variations of several of them here on the blog but this one was rather new to me. On the menu I had one of my standards, Ranch Chicken, and as I was getting out the ingredients, I noticed the Cajun seasoning. I thought it would be a good mix: ranch and Cajun. Almost like having a crawfish stampede or eating gumbo around the campfire.
I liked the combination. It looked and tasted awesome.
A simple set of ingredients.

- Chicken (can use boneless chicken or boned)
- Packet of Hidden Valley Ranch dressing mix
- 2T Cajun spices
Preheat oven to 375°.
Place chicken in a baking dish and coat the top with lime juice. Mix the ranch mix and Cajun spice together and sprinkle over the chicken. Bake for 45 minutes.
