Kick It Up

Living in the residence halls (dorms) at college is a great way to meet people who may end up in your life forever. My wife was randomly placed with a woman that she hadn’t known and after living with each other for two years, they have remained in each other’s lives ever since. In fact, she was my bride’s maid of honor at our wedding.

Cooking in the halls was a rather uncommon event. Although there was a kitchenette available to the residents, it was rare that it was ever used. My wife, and her roommate, used theirs though. After a trip to the local grocery store, Manwiches were made. For those unfamiliar with the brand, they are also known as Sloppy Joes. The roommates would enhance the standard meat, can of sauce and bun recipe with onions and peppers. This meal was in honor of that dorm cooking – kicked up Manwiches!

Yes, that is a pita. I had a few in the freezer and only such a hearty bread could dare to hold the meal.

Manwich sauce and meat are here. Also are the onion (red for me) and pepper (they used green and I chose yellow) that were in the enhanced version. I added in some corn, zucchini and long grain and wild rice.

Dice and fry up the veggies.

Then the meat.

Drain the grease and then add the sauce.

Add the rice.

And the veggies.

And eat!

Yum! While not healthy, the volume of veggies to meat is much better in this version.

    I have to make this for Mark. He loves “Manwich” and this would make it a bit healthier for me. I love it.

    I’m currently living in a residence hall and searching for easy but healthy recipes to make instead of campus dining halls. It’s a challenge but it’s fun! Never had Manwhich haha but a veggie pita sounds good 🙂

    Oh wow, I haven’t heard about Manwiches in such a long time! But I immediately could see the label in my mind’s eye…Love your adaptation. Looks fantastic!
